Today on the bar

A daily single-origin pour-over, roasted within the last fourteen days.

Our eighteen-seat pour-over menu rotates through single-origin lots roasted on-site every Tuesday and Friday. We don't serve anything older than fourteen days. Today's selection is weighed, ground, and poured by hand — a slow ritual that takes about three minutes and is the only thing worth watching when you're stuck on a paragraph.

The workspace

A place to actually work all day, not just have a coffee.

Three honest, specific reasons Pillar works as a daily workspace — written for the people who keep laptops open past five o'clock.

01

Unlimited weekday table time.

Stay from seven to six. Stay for the whole afternoon. Reservations have no ninety-minute cutoff on weekdays, and our seats are priced at the day, not the hour. Bring the long project; we'll keep the cup full.

02

Gigabit fiber with a published SLA.

The Wi-Fi password is on every table. The published minimum is four hundred eighty megabits per second, and we post last week's uptime on the wall by the bar. No throttling, no captive portals, no timeouts after ninety minutes of idle.
